Stir together ¾ cup whole wheat flour, ¼ cup wheat germ, ¼ cup dry milk powder, ¾ teaspoon salt, ¼ teaspoon baking powder, and ¼ teaspoon baking soda. Set aside.
In a large mixing bowl, beat together ½ cup margarine, ½ cup peanut butter, and ¾ cup honey. Add 1 egg and 1 teaspoon vanilla. Beat well.
Mix the butter and flour mixtures together. Mix well.
Stir together your choice of 1 cup raisins, 1 cup dried apricots (snipped into small pieces), 1/3 cup sunflower seeds, ½ cup chopped walnuts, and 1/3 cup shredded coconut. (I use raisins, apricots, and walnuts.) Add to the dough. Mix well.
Drop by rounded teaspoonfuls onto ungreased cookie sheet.
Bake in 350 degree oven for 10 minutes. Let cool on baking sheet for a minute, then remove to plates or wire racks to cool completely.
